Simple Butternut 

Squash Soup

INGREDIENTS

1 Large Butternut Squash, cut in half 1 onion, sliced 2 garlic cloves, chopped 2 cups vegetable broth 2 tbsp olive oil 1/8 tsp salt and pepper 1/8 tsp nutmeg

Preheat oven to 375. Line cooking sheet with parchment paper Put butternut squash, onions and garlic on baking sheet and season with olive oil, salt and pepper Bake for 30 minutes or until cooked through.

Scoop out butternut squash and mix well with garlic and onion Move all vegetable ingredients to a Vitamix blender OR use an immersion blender in a large pot Add vegetable broth or coconut milk Blend until smooth and be sure garlic is all blended.

Transfer to stovetop and heat thoroughly Pour into bowls and serve with mini toast. Season and garnish to taste with cilantro, chives or sour cream
