Finely chop enough cauliflower in Vitamix or food processor to make 2 cups and until they appear rice-like In saucepan saute, carrots, onion and garlic in heated olive oil for 10 minutes on medium heat
Season with salt and pepper stirring continuously
Spread carrot mixture to outside rim of saucepan to form a "well" in center
Add 2 eggs and scramble in center of saucepan (note:do not combine eggs with cauliflower mixture until they are cooked completely)
Once eggs are scrambled completely combine chopped cauliflower
Then stir together entire mixture and stirfry for 10 minutes on high heat or until cauliflower is softened
Stir in Green Onions and Sesame Seeds
Optional 1 tablespoon Tamari Soy Sauce, 1 cup Chicken shredded, mushrooms, spinach, cilantro, lime, sesame seeds or add on top of baked potato
