Quick and Easy Artichoke Cups with Ground Beef are healthy, gluten free and low carb. The artichoke bottoms are resting in a chicken broth of lemon juice and can be poured on top after baking. After baking, toasted pine nuts are sprinkled on top for an added boost of flavor. Easy to make!
Rinse frozen artichoke bottoms for 30 seconds under warm water and arrange into baking pan
Brown ground beef in a large pan
Add 7 Spice Seasoning and Salt
Fill each artichoke with ground beef
Boil chicken broth in a pan and add the lemon juice
Pour the broth on the bottom of the baking pan to saturate the artichoke bottoms only not the beef
Bake covered in preheated 400 degree oven for 40 minutes
While artichoke cups are baking, toast pine nuts and then sprinkle on top of artichoke cups
