Healthy Rainbow Vegetable Pasta Salad

You will love this simple healthy rainbow vegetable pasta salad. It's quick and easy to make with fresh healthy ingredients such as tomatoes and zucchini.

Ingredients
  

  • 1 medium zucchini, diced
  • 1 medium yellow squash, diced
  • 1/2 large orange bell pepper, diced
  • 1 small shallot, diced
  • 1 cup cherry tomatoes, halved
  • 2 tbsp olive oil 
  • 1/2 tsp red pepper flakes – optional
  • 1 pkg penne pasta
  • dash salt and pepper
  • 1 tbsp parmesan or more to taste

Instructions
 

  • Saute shallots in olive oil for 2 minutes
  • Add tomato halves and saute 2 minutes
  • Stir in remaining veggies
  • Cook pasta in separate pot according to box directions and add seasonings and combine with veggies
  • Drizzle olive oil
  • Add a little pasta water if needed
  • Garnish with parmesan, serve, and enjoy!
