I love egg salad!!  It’s an easy to make popular dish for lunch or dinner. I will show you how to make healthy egg salad that can also be Keto and Gluten Free.

  • 6 Eggs
  • 1/4 cup Onion chopped or sliced
  • 1 tsp Deli Mustard
  • 1 tsp Paprika
  • 1 tbsp Chipolte Lime Mayo
  • 1/4 tsp Salt
  • 1/4 tsp Pepper
  • Optional: Sliced Sourdough, Iceberg Lettuce, Arugula, Spinach


  • Gather the ingredients
  • Boil the eggs, peel and mash them using an egg masher
  • Combine mashed eggs, onion, mustard, salt and pepper in medium glass bowl
  • Place egg mixture on toasted sourdough bread with chipolte mayo on each side of bread
  • Add desired salad topping such as arugula or spinach
  • If you’re doing Keto or Gluten Free, lay egg mixture in lettuce and top with chipolte mayo
  • Sprinkle with Smoked Paprika and desired salt and pepper
