The wonderful combined flavors of coconut milk and cauliflower make this a great dinner option! I don’t like curry but this recipe is so good that I barely taste the added curry.Made especially for you from Alyse @ Healthy Foodie
3cupsCauliflowerchopped in small and large florets
Saute garlic, onions and chicken in olive oil about 20 minutes until chicken is cooked completely. Add curry powder about 2 tablespoons and spritze of lime or more depending on preference and simmer for 10 minutes.
Add all veggies except cauliflower and saute for 15 minutes until veggies are soft.
Add additional curry powder and simmer for 15 minutes so flavors combine.
Add cauliflower, coconut milk and vegetable broth. Let simmer for 10 minutes.
