Easy Cauliflower Chicken Curry Recipe

The wonderful combined flavors of coconut milk and cauliflower make this a great dinner option!  I don’t like curry but this recipe is so good that I barely taste the added curry.

Ingredients
  

  • 1 lb Chicken Strips cut in bite sized pieces
  • 2 tbsp Olive Oil
  • 3 Garlic Cloves minced
  • 2 Onions chopped
  • 2 tbsp Curry Powder
  • 1 Green Zucchini sliced
  • 1/2 cup Orange Bell Pepper chopped
  • 1 Lime
  • 1 pkg Button Mushrooms sliced
  • 3 cups Cauliflower chopped in small and large florets
  • 2 cans Coconut Milk
  • 1 carton Vegetable Broth
  • 1/2 cup Green Onion

Instructions
 

  • Gather Ingredients
  • Saute garlic, onions and chicken in olive oil about 20 minutes until chicken is cooked completely.  Add curry powder about 2 tablespoons and spritze of lime or more depending on preference and simmer for 10 minutes.
  • Add all veggies except cauliflower and saute for 15 minutes until veggies are soft.
  • Add additional curry powder and simmer for 15 minutes so flavors combine.
  • Add cauliflower, coconut milk and vegetable broth.  Let simmer for 10 minutes.
  • Garnish on top with green onions!
  • Enjoy!
