Easy Healthy Salmon Chowder Recipe

Do you love salmon? It happens to be one of my favorite proteins served atop a salad or as an entree. Here is a fabulous recipe for a healthy homemade salmon chowder. This easy salmon chowder recipe will be a favorite served as a starter or main dish.

Ingredients
  

  • 2-3 tbsp olive oil or butter
  • 1 diced onion
  • 1 small diced fennel bulb
  • 1 cup diced celery
  • 2-4 minced garlic cloves
  • 1 tsp fennel leaves
  • 1/2 tsp thyme
  • 1/2 tsp paprika
  • 1/3 cup white wine
  • 3 cups chicken broth
  • 3/4 lb baby red potatoes thinly sliced
  • 1 bay leaf
  • Dash salt and pepper
  • 1 lb fresh salmon cooked and flaked
  • 1 cup heavy cream

Instructions
 

  • Gather Ingredients
  • In a pot over medium heat saute onion, fennel bulb, and celery in olive oil or butter
  • Add garlic, thyme, fennel seeds, and paprika
  • Stir in wine, broth, and add bay leaf
  • Bring to a simmer over high heat and add potatoes
  • Reduce heat to medium low until potatoes are tender
  • Add cream and salmon and simmer for 15 minutes
  • Season with salt & pepper to taste, garnish with lemon and fennel fronds if desired

Notes

  • Dairy free option: sub 1 cup of coconut milk or more to taste
  • Keto option: sub potatoes with chopped finely cauliflower
  • Add 1 teaspoon fish sauce for additional fish flavor. You can also add 1/2 clam juice
  • Sub whole milk or half and half for a lighter & low calorie chowder
  • Optional: add chopped bacon, carrots, corn or chopped cauliflower
