Easy Healthy Salmon Chowder Recipe
Do you love salmon? It happens to be one of my favorite proteins served atop a salad or as an entree. Here is a fabulous recipe for a healthy homemade salmon chowder. This easy salmon chowder recipe will be a favorite served as a starter or main dish.

2-3 tbsp olive oil or butter 1 diced onion 1 small diced fennel bulb 1 cup diced celery 2-4 minced garlic cloves 1 tsp fennel leaves 1/2 tsp thyme 1/2 tsp paprika 1/3 cup white wine 3 cups chicken broth 3/4 lb baby red potatoes thinly sliced 1 bay leaf Dash salt and pepper 1 lb fresh salmon cooked and flaked 1 cup heavy cream
Gather Ingredients
In a pot over medium heat saute onion, fennel bulb, and celery in olive oil or butter
Add garlic, thyme, fennel seeds, and paprika
Stir in wine, broth, and add bay leaf
Bring to a simmer over high heat and add potatoes
Reduce heat to medium low until potatoes are tender
Add cream and salmon and simmer for 15 minutes
Season with salt & pepper to taste, garnish with lemon and fennel fronds if desired
Dairy free option: sub 1 cup of coconut milk or more to taste
Keto option: sub potatoes with chopped finely cauliflower
Add 1 teaspoon fish sauce for additional fish flavor. You can also add 1/2 clam juice
Sub whole milk or half and half for a lighter & low calorie chowder
Optional: add chopped bacon, carrots, corn or chopped cauliflower
