Healthy Rainbow Vegetable Pasta

You will love this simple healthy rainbow vegetable pasta salad.  It’s quick and easy to make with fresh healthy ingredients.   Healthy pasta options can vary in pasta choices to gluten free selections, spiral rainbow pasta and spinach pasta.   For this recipe I used a skinny penne pasta.

Key Ingredients Zucchini Yellow squash Orange bell pepper Cherry tomatoes Penne pasta Parmesan Cheese

STEP ONE

Sauté shallots in olive oil.

STEP TWO

Add tomato halves and sauté

STEP THREE

Stir in remaining veggies

STEP FOUR

Cook pasta in separate pot according to box directions and add seasonings and combine with veggies

STEP FIVE

Drizzle olive oil and add a little pasta water if needed

Garnish with parmesan and enjoy healthy rainbow vegetable pasta!
