Tasty Spanakopita Spinach Pie | Healthy Foodie - Wellness

Ingredients
  

  • 2 tablespoons olive oil
  • 2 lbs fresh spinach
  • ½ onion, chopped
  • ½ cup green onion, sliced
  • 1 teaspoon garlic
  • 2 tablespoons parsley
  • 2 tablespoons dill
  • 8 oz feta cheese crumbles
  • 1 egg
  • Salt & pepper to taste
  • 1lb phyllo dough, thawed
  • ¾ cup butter, melted

Instructions
 

  • Preheat oven to 375 and line a baking sheet with parchment paper
  • In a skillet cook the spinach in 1 tablespoon of olive oil until wilted
  • Squeeze out the excess liquid and chop
  • In the same skillet use the remaining olive oil to cook the onion until tender
  • Stir in the green onion, garlic, parsley and dill then add the mixture to the spinach in a large bowl
  • Add in the salt & pepper, feta, and egg – stir to combine well
  • Place a sheet of phyllo on the lined baking sheet and brush it with the melted butter
  • Repeat this process with three more sheets of dough then evenly spoon the spinach mixture on top
  • Repeat this dough and mixture layering until both are used up
  • The top layer should be dough
  • Brush it with the remaining butter and bake for about 20 minutes until golden brown
  • Cool slightly then slice, serve, and enjoy!

Notes

To make spanakopita a healthier option, consider using whole wheat phyllo dough or making your own homemade dough with whole wheat flour. Also, try using a reduced-fat feta cheese or using a smaller amount of cheese. Adding more vegetables to the filling, such as onions, garlic, and bell peppers, can also boost the nutritional value of the dish.
