Ingredients
  

  • 1/4 cup Pearl Barley
  • 6 cups Vegetable Broth
  • 1 clove Garlic chopped
  • 1 cup Carrots chopped
  • 1/4 cup Celery chopped
  • 1/2 cup Onions chopped
  • 2 cups Mushrooms any variety
  • 1 tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Pepper
  • 1 tsp Soy Sauce

Instructions
 

  • Gather ingredients and prep
  • Add barley and vegetable broth-simmer for 1 hour until tender
  • Saute garlic and onions in olive oil
  • Combine in large pot, onions, garlic, carrots and celery for 15 minutes
  • Add mushrooms and heat through
  • Season to taste with salt, pepper and soy sauce
  • Simmer for 15 minutes or until veggies are tender
  • Add optional roasted tofu and top with parsley, cilantro or green onion
