Mini Spinach Lasagna Roll Ups
Don’t miss trying these fabulous cheesy mini spinach lasagna roll ups. They are easy to make and tasty for the entire family. There are many options that can be adjusted such as using gluten free noodles, vegan ingredients or vegetarian. I use a ground turkey and add piles of mozzarella on top to satisfy even the kids in the family. It’s freezer friendly and can be made the day before serving.
Ingredients for Mini Spinach Lasagna Roll Ups
- 10 Lasagna noodles, cooked according to package
- 32 oz pasta sauce or make my homemade sauce
- 1 lb Ground Turkey
- 2 Cups Fresh Spinach Leaves
- 15 oz fat free ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 1/2 cups Mozzarella
- 1 egg
- Salt
- Pepper
How to Make Mini Spinach Lasagna Roll Ups
Step by Step Directions
Preheat oven to 375°
Gather Ingredients
Boil Noodles and Run Under Cold Water
Saute Onion, Garlic and Ground Turkey Until Cooked
Add Pasta Sauce to meat mixture but keep 1 cup for adding at the end
Mix together spinach, ricotta, egg, Parmesan, salt and pepper in a medium bowl
Spread 1 cup sauce evenly across the bottom of a 9 x 13 baking dish.
Place the flat cooked (but dry) lasagna noodles on top. Spread 1/3 cup cheese mixture over each noodle and meat mixture. Roll noodle and place seam side down into the baking dish. Repeat with remaining noodles.
Spoon remaining tomato sauce over the lasagna rolls and sprinkle completely with 1 cup mozzarella cheese.
Cover the baking dish with foil and bake for 40 minutes, until cheese is melted. Bake for 60 minutes if lasagna has been chilled for 1-2 days and bake for 70 minutes if from thawed/frozen
For the last 5 minutes remove foil and broil on high or until cheese is bubbly

Can I freeze Mini Spinach Lasagna Roll Ups
Lasagna roll ups can be frozen. I recommend to assemble and immediately freeze. Do not bake first. When you are ready to bake, defrost in the fridge 24 hours before. Bake at 375 degrees for 70 minutes.
They can also be refrigerated for 1-2 days before baking. Just cover tightly and bake at 375 degrees for 60 minutes.
What else can I add to Lasagna Roll Ups
There are many options to add flavors to lasagna roll ups but they need to be small enough to roll up. Try olives, fresh basil, grilled mushrooms, chopped grilled zucchini and chopped grilled green or red pepper.
