Cauliflower Chicken Curry

The wonderful combined flavors of coconut milk and cauliflower make this a great dinner option!  I don’t like curry but this recipe is so good that I barely taste the added curry.  The extra healthy veggies can be altered to your taste preferences so that the whole family will enjoy it.  This easy cauliflower chicken curry will be a family favorite.  If you have leftover cauliflower, be sure to use it and try my other recipe Cauliflower Fried Rice.

Is Cauliflower Healthy?

Yes, cauliflower is considered a healthy vegetable. It’s low in calories but rich in vitamins, minerals, and antioxidants. It’s particularly high in vitamin C, vitamin K, and folate. Additionally, cauliflower is a good source of fiber and contains compounds with anti-inflammatory properties. It can be a versatile addition to a balanced diet, whether roasted, mashed, or incorporated into dishes like cauliflower rice or cauliflower pizza crust.

Is Curry Healthy?

The healthiness of curry depends on its ingredients and preparation method.

Curry itself is not inherently unhealthy; it’s a blend of spices and can be made with a variety of ingredients, including vegetables, lean proteins like chicken or fish, and healthy fats like coconut milk.

However, some curry dishes may be less healthy depending on the ingredients used. For example, if a curry contains a lot of oil, full-fat coconut milk, or high-sodium sauces, it may be higher in calories and less healthy overall. Additionally, dishes with fried meats or added sugars can also reduce their healthiness.

To make a healthier curry, you can focus on using lean proteins, plenty of vegetables, and lighter alternatives like reduced-fat coconut milk or yogurt instead of heavy cream. Cooking methods like grilling or baking instead of frying can also help reduce the calorie content. Ingredients for Easy Cauliflower Chicken Curry

  • 1 lb Chicken Strips cut in bite sized pieces
  • 2 tablespoons Olive Oil
  • 3-5 Garlic Cloves minced
  • 2 Onions chopped
  • 2 tablespoons Curry Powder
  • 1 Green Zucchini sliced
  • 1/2 cup Orange Bell Pepper chopped
  • 1 Lime
  • 1 pkg Button Mushrooms sliced
  • 3 cups Fresh Cauliflower chopped into large and small florets
  • 2 cans 13 oz Coconut Milk
  • 1 carton Vegetable Broth
  • 1/2 cup Green Onion
  • Dash Salt and Pepper

Step by Step Directions

  • Gather Ingredients

Cauliflower Chicken Curry

  • Saute garlic, onions and chicken in olive oil about 20 minutes until chicken is cooked completely.  Add curry powder about 2 tablespoons and spritze of lime or more depending on preference and simmer for 10 minutes.

Cauliflower Chicken Curry

  • Add all veggies except cauliflower and saute for 15 minutes until veggies are soft.

Cauliflower Chicken Curry

  • Add additional curry powder and simmer for 15 minutes so flavors combine.

Cauliflower Chicken Curry

  • Add cauliflower, coconut milk and vegetable broth.  Let simmer for 10 minutes.

Cauliflower Chicken Curry

  • Garnish on top with green onions!

    Hi Alyse! Just curious, would the recipe change if I use chicken thigh meat versus chicken breast meat?

    (Since chicken thigh is fattier and packs more flavor I love to cook with that- especially in a creamy curry like this ?).
