Easy Low Carb Cauliflower Fried Rice
It’s a great substitute for potatoes and rice! Cauliflower rice is a tasty dish prepared with low carb cauliflower instead of high carb selections. It’s a staple when someone is on the keto diet. But also great for adding as a side dish to just about any healthy meal. Making easy low carb cauliflower fried rice is healthy and fun. My favorite part is creating the “well” in the center to stirfry the eggs.
Ingredients for Low Carb Cauliflower Fried Rice
- 2 cups Cauliflower finely chop in Vitamix
- 1 tablespoon Oilve Oil
- 1 teaspoon Salt
- 1 teaspoon Pepper
- 1 cup Carrots chopped
- 1/2 cup Onion chopped
- 1 tablespoon Garlic minced
- 2 Eggs scrambled
- 1/2 cup Green Onion chopped
- Optional 1 tablespoon Tamari Soy Sauce, 1 cup Chicken shredded, mushrooms, spinach, cilantro, lime, sesame seeds or add on top of baked potato

Directions for Low Carb Cauliflower Fried Rice
- Finely chop enough cauliflower in Vitamix or food processor to make 2 cups and until they appear rice-like
- In saucepan saute, carrots, onion and garlic in heated olive oil for 10 minutes on medium heat
- Season with salt and pepper stirring continuously
- Spread carrot mixture to outside rim of saucepan to form a “well” in center
- Add 2 eggs and scramble in center of saucepan (note:do not combine eggs with cauliflower mixture until they are cooked completely)
- Once eggs are scrambled completely combine chopped cauliflower
- Then stir together entire mixture and stirfry for 10 minutes on high heat or until cauliflower is softened
- Stir in Green Onions and Sesame Seeds
- Add Optional 1 tablespoon Tamari Soy Sauce, 1 cup Chicken shredded, mushrooms, spinach, cilantro, lime, sesame seeds or add on top of baked potato

- Purple-The purple color in this cauliflower is caused by the presence of anthocyanins, water-soluble pigments that are found in many other plants and plant-based products, such as red cabbage and red wine
- Green-Sometimes called Broccoflower, it tastes the same as white cauliflower.
- Orange-The orange colored cauliflower contains beta-carotene as the orange pigment, a provitamin A compound. This orange trait originated from a natural mutant found in a cauliflower field in Canada.
