2-3 tablespoons olive oil or butter

1 onion, diced

1 small fennel bulb, diced

1 cup celery, diced

2-4 garlic cloves, minced

1 teaspoon fennel seeds

½ teaspoon thyme

½ ts smoked paprika

⅓ cup white wine

3 cups chicken broth

¾ lb baby red potatoes, sliced thin

Salt & pepper to taste

1 bay leaf

1 lb salmon, cooked and flaked, no skin/bones

1 cup heavy cream for healthier version sub with coconut milk
