Mexican Charcuterie Board Cups Ingredients
- ½ cup guacamole
- 1 cup red cabbage shreds
- 6-8 round tortilla chips per cup
- Black olives, 4 per toothpick
- 1 mango, sliced thin, 3-4 slices per cup
- Colby jack cheese sticks, 1 per cup
- Pepper jack cheese sticks, 1 per cup
- 1 lime, sliced
- Jicama sheets, folded or rolled, 1 per cup
Guacamole Recipe
- 4 whole ripe avocados
- 1/4 cup fresh lime juice
- 1/4 cup chopped red onion
- 1/4 cup fresh chopped garlic or garlic salt
- 1 tsp kosher salt – eliminate if using garlic salt
- 1/2 cup diced tomato
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1/2 tsp cumin
Mash avocados and combine all of the ingredients. Super simple and delicious.
Mexican Charcuterie Board Cups Instructions
Serve in salsa bowls or disposable cups
- Place ¼ cup guacamole in each cup then 6-8 chips next to guacamole
- Fill remaining bottom space with red cabbage
- Fold Jicama sheet into a triangle shape and lay on top of cabbage
- Stand mango slices in back of cup
- Add cheese sticks and olive skewers
- Place a lime slice on top of the Jicama
