Quick and Easy Artichoke Cups with Ground Beef
Have you heard of ardishawki stew? It’s the Lebanese name for this new recipe that is so tasty, quick and easy to make. I’m calling it Quick and Easy Artichoke Cups with Ground Beef. I ventured out to the local international market to find some of the healthy ingredients and I had such a great time. I hope you like this authentic recipe originated from my cousin.

Artichoke Cup Ingredients
1 lb Ground Beef
1/2 Teaspoon 7 Spice (I found this seasoning at my local international store)
1/2 Teaspoon Salt
2 Bags Frozen Artichokes (I found these at my local international store)
1/2 Cup Pine Nuts Toasted
2 Cups Chicken Broth
2 Tablespoons Lemon Juice

Step-by-Step Instructions
- Gather Ingredients
- Rinse frozen artichoke bottoms for 30 seconds under warm water and arrange into baking pan
- Brown ground beef in a large pan
- Add 7 Spice Seasoning and Salt
- Fill each artichoke with ground beef
- Boil chicken broth in a pan and add the lemon juice
- Pour the broth on the bottom of the baking pan to saturate the artichoke bottoms only not the beef
- Bake covered in preheated 400 degree oven for 40 minutes
- While artichoke cups are baking, toast pine nuts and then sprinkle on top of artichoke cups

Recipe Tips and Variations
Spices can be substituted for 1/4 teaspoon cinnamon and 1/8 teaspoon All Spice
Chicken Broth can be substituted for Vegetable or Beef Broth
Broth can also be poured on top of cups for extra flavor after baking
Serve with jasmine rice and green salad to complete the meal
Add chopped onions with the ground beef

How to Toast Pine Nuts
The added flavor that pine nuts brings to a recipe is powerful especially when they are toasted. It’s easy to toast pine nuts on the stove but you can also bake them in the oven. Here is a step by step guide to toasting pine nuts on the stove.
- Start with a dry pan without any oils
- Toast on medium flame for 7 minutes
- Continually stir to prevent burning
- Remove from pan once they are browned
- Cool immediately by transferring to a bowl
