Healthy Green Bean Mushroom Saute

So tasty and healthy!  I always enjoy this healthy green been mushroom saute.  Pair it with my meatloaf minis and you will have a great keto friendly and gluten free meal.  It’s super easy to make too.

Ingredients for Green Bean Mushroom Saute

  • 3 tablespoon Olive Oil
  • 1 Medium Onion Chopped
  • 1 teaspoon Garlic
  • 2 Cups Fresh Green Beans Trimmed (see below for how to trim green beans)
  • 8 oz Package Whole Mushrooms

Directions for Green Bean Mushroom Saute

  • Saute Garlic and Onion in Olive Oil until onions are carmelized about 10 minutes
  • Add Fresh Green Beans and cook until heated through about 15 minutes
  • Add Mushrooms and cook until soft and browned about 15 minutes
  • Optional add red bell pepper

How to Trim Green Beans

There are some different thoughts on this.  Some people want to trim by hand each green bean.  What I do is collect a handful and cut both ends off with a knife.  I like the clean look it has when done and it’s easy to eat.

    I can’t wait to try this recipe.
    I love the simplicity and with minimal seasonings the flavours of both the beans and mushrooms will really come through, complementing each other beautifully.
    I make a similar dish but using snow peas in place of the beans.
    I also add black pepper and sometimes a little cayenne.
    We are back to only necessary trips out, so can’t really justify heading to the market for 1 ingredient.
    I realize fresh is always best but would canned mushrooms work in a pinch?

  2. Yummy, this recipe is easy and quick, and it looks delicious. I love green beans and mushrooms, you can’t go wrong with this. I am going to make this soon! I also like to add curry and black pepper with this, I often use curry 😉 I love the flavor 🙂
