This fabulous healthy pasta salad is easy and quick to make! I’ve added some unique unexpected ingredients to suit everyone that both kids and adults will love. This is a cold pasta salad that you can prepare the day before and toss with dressing the day of. It’s simple and tasty as a side dish or main entree. It can be made gluten free and it’s healthy which makes it a great choice for every occasion.

Ingredients for Easy Healthy Pasta Salad

  • 1 pkg Gluten Free Pasta (I use the Trader Joe’s gluten free brown rice pasta fusilli but be cautious it doesn’t get hardened after cooling)
  • 2 cups Tomatoes halved
  • 1 cup Cucumber quartered
  • 1/2 cup Olives (I use black olives)
  • 1/2 cup Purple Onions chopped
  • 1/2 cup Pine Nuts
  • 3/4 cup Feta Cheese
  • Dressing of your choice-I suggest a homemade lemon garlic vinaigrette or Trader Joe’s feta dressing
  • Optional add a protein of your choice, avocado, garbanzo beans, salami, salmon, chicken or steak all pair well

Ingredient List for Best Greek Homemade Dressing

1/4 cup Olive Oil

1 Lemon

2 tbsp Red Wine Vinegar

2 Minced Garlic Cloves

1 Tsp Dried Oregano

Dash Salt and Pepper

Combine all ingredients, whisk and chill

Directions for Healthy Pasta Salad

Gather All Ingredients for Pasta

Boil pasta based on package directions and let cool

Gather All Ingredients for dressing and prepare dressing per above

Prepare tomatoes, cucumber and onions

Add to cooled pasta noodles

Combine all other ingredients

Toss with dressing and add additional sprinkle of feta and pine nuts on top

Pour into bowls and serve
