Ingredients for Quinoa Avocado Feta Salad
1 cup romaine lettuce, chopped
½ cup cherry tomatoes, halved
½ cup cucumber, sliced
½ cup red onion, diced
½ cup quinoa, cooked according to package
½ cup chickpeas
1 small avocado, diced
½ cup Feta cheese, optional
Dressing
¼ cup olive oil
3 tablespoons balsamic vinegar
¼ cup lemon juice
1 tablespoon apple cider vinegar
1 teaspoon parsley
Salt & pepper to taste
Directions for Quinoa Avocado Feta Salad
In a small bowl whisk together dressing ingredients until well combined and set aside
Cook quinoa according to package
Cut up vegetables and place in large bowl
Add in cooled quinoa and chickpeas
Drizzle on dressing
Toss to thoroughly coat. Sprinkle with feta cheese.
Serve and enjoy!
