You will love this simple healthy rainbow vegetable pasta salad. It’s quick and easy to make with fresh healthy ingredients. Healthy pasta options could consist of varying your pasta choices to gluten free selections, spiral rainbow pasta and spinach pasta. For this recipe I used a skinny penne pasta.

Ingredients for Healthy Rainbow Vegetable Pasta Salad
1 zucchini, diced
1 yellow squash, diced
½ orange bell pepper, diced
1 shallot, diced
1 cup cherry tomatoes, halved
1 tablespoon olive oil + more to drizzle
½ teaspoon red pepper flakes – optional
1 package penne pasta or your choice of pasta
Salt & pepper to taste
Parmesan cheese
Directions for Rainbow Veggie Pasta
Saute shallots in olive oil for 2 minutes
Add tomato halves and saute 2 minutes
Stir in remaining veggies
Cook pasta in separate pot according to box directions and add seasonings and combine with veggies
Drizzle a little oil
Reduce heat to low and heat for 15 minutes
Add a little pasta water if needed
Garnish with parmesan, serve, and enjoy!
