How to Make Healthy Egg Salad

I love egg salad!!  It is an easy to make popular dish for lunch or dinner. I will show you how to make healthy egg salad that can also be Keto and Gluten Free.  I’ve chosen a mayo that will blow your mind and your family will be asking for more. To be honest, I didn’t think I was going to like this special mayo but it was amazing!  Read more to hear all about it.

Ingredients for my Healthy Egg Salad

  • 6 Hard Boiled Eggs
  • 1/4 Cup Onion chopped or sliced
  • 1 tsp Deli Mustard
  • 1 tsp Paprika
  • 1 tbsp Chipolte Lime Mayo-The best!!
  • 1/4 tsp Salt
  • 1/4 tsp Pepper

Optional: Sliced Sourdough, Iceberg Lettuce, Avocado, Arugula, Spinach

How to Boil Eggs without them Cracking

I’ve got this down! It’s so easy and they don’t crack.

  • Put eggs into cool water submerged and start to boil
  • Add 1 tsp apple cider vinegar
  • Let rapid boil for 10 minutes
  • Run under cool water and let sit for 10 minutes in cool water or in fridge
  • Peel shells off and you have perfect hard boiled eggs

I’ve created some healthy egg salad options for you and I will show you how to make healthy egg salad. I’ve always felt that mayonnaise is so plain and boring.  So I don’t add any mayo into my mashed egg instead I use deli mustard.  Combine it with the chipolte mayo and it’s amazing!

  • Gather the ingredients
  • Boil the eggs
  • Peel the eggs and mash them using an egg masher
  • Combine mashed eggs, onion, mustard, salt and pepper in medium glass bowl

  • Place egg mixture on toasted sourdough bread with chipolte mayo on each side of bread
  • Add desired salad topping such as avocado, arugula or spinach
  • If you’re doing Keto or Gluten Free, lay egg mixture in lettuce and top with chipolte mayo
  • Sprinkle with Smoked Paprika and desired salt and pepper

  1. 8 hard-cooked eggs, peeled and coarsely chopped.
  2. 1/2 cup mayonnaise.
  3. 2 tablespoons celery, chopped.
  4. 2 teaspoons Dijon mustard.
  5. Few dashes hot-pepper sauce.
  6. Salt and pepper.
  7. Lettuce or watercress.
  8. Bread or toast
