Ingredients for Healthy Corn and Asparagus Pesto Pasta
1 lb asparagus, trimmed
2 corn on the cob
2 tablespoons olive oil
1 teaspoon each of fresh garlic or garlic powder, salt, and pepper – mixed together
1 lb pasta of your choice (I use gluten free rice pasta)
3/4 cup pesto sauce (I have used the costco brand or make your own)
3 tablespoons pasta water
3 tablespoons lemon juice
1/4 cup parmesan cheese shreds
How to Make Homemade Pesto Sauce
Do you want to make your own pesto sauce? Whip together the ingredients below with an immersion blender and you will have a delicious pesto sauce for pasta in 10 minutes. It’s delicious with hot or cold pasta.
Ingredients for Pesto Sauce
- 4 cups loosely packed fresh basil leaves (just under 3 ounces)
- 1/2 cup grated Pecorino Romano or Parmigiano-Reggiano cheese
- 2 cloves garlic chopped
- 1/4 teaspoon salt
- 1/2 cup pine nuts, toasted (learn how to toast pine nuts here)
- 1/2 cup good quality extra virgin olive oil
Pesto sauce can be made using a vitamix blender, food processor or immersion blender.
Directions for Roasted Corn and Asparagus Pesto Pasta
Preheat oven to 425 degrees and line a rimmed baking sheet with parchment paper
Brush corn cobs with olive oil and sprinkle on seasoning mixture
Keep cobs in husk and roast in oven for 30 minutes
Add asparagus to the pan, brush with olive oil and sprinkle on seasoning mixture
Roast in the oven for an additional 15 minutes or until the asparagus are tender
Carefully slice the corn off the cob, set aside
Cook pasta and drain reserving 3 tablespoons pasta water
Stir in pesto sauce and lemon juice and any additional seasoning mixture left over
Add in corn and asparagus, fold to combine
Plate, garnish with parmesan cheese, and enjoy!
